Patty Pan is a type of summer squash and can be used in any recipe calling for zucchini or other summer squash. The skin and seeds are edible. They can be sliced, shredded or cubed for cooking. The only difference (besides shape and color) from zucchini is they tend to be slightly firmer. It is always fun to see these flying saucers in your vegetable bin.
Store in a plastic bag in your refrigerator for up to one week.
- Slice, brush with oil and seasonings and grill.
- Add to soups in cubes.
- Saute cubes with onions and seasonings as a side dish.
- Slice, bread and fry.
- Shred, saute until soft and add to pasta sauce.
- Cut into sticks and eat raw with dip.
- Add to a stir fry.
