Zucchini is a type of summer squash. The peels and seeds are edible. They can be sliced, shredded or cubed for cooking. In general, there isn't a lot of inherent flavor to a zucchini. However, they add interesting texture and color to many dishes - not to mention nutrients.
Store in a plastic bag in your refrigerator for up to one week.
- Slice, brush with oil and seasonings and grill.
- Add to soups in cubes.
- Saute cubes with onions and seasonings as a side dish.
- Slice, bread and fry.
- Shred, saute until soft and add to pasta sauce.
- Cut into sticks and eat raw with dip.
- Add to a stir-fry.
