Cucumber
General Information
Cucumber is a vegetable eaten almost exclusively raw. That is great when the summer is hot and you want a refreshing cool meal or snack. The skins are very tasty and I don't recommend peeling them. We don't use wax on the outside like most supermarkets, so give the skins a chance even if you think you don't like them. The plants do best when they get plenty of water. In drought conditions cucumbers can develop a bitter taste.
Storage Information
Store in your refrigerator in a plastic bag for about a week.
Cooking Suggestions
- Eat cucumbers raw as a snack.
- Slice into your favorite salads.
- Cubed with cherry tomatoes and tossed lightly in vinaigrette.
- Sliced on sandwiches.
- Blend with yogurt, fresh mint, fresh basil, salt and pepper for a cold soup.
