Cucumber
General Information
Cucumber is a vegetable eaten almost exclusively raw. That is great when the summer is hot and you want a refreshing cool meal or snack. The skins are very tasty and I don't recommend peeling them. We don't use wax on the outside like most supermarkets, so give the skins a chance even if you think you don't like them.
Storage Information
Store in your refrigerator in a plastic bag for about a week.
Cooking Suggestions
Eat cucumbers raw as a snack.
Slice into your favorite salads.
Cubed with cherry tomatoes and tossed lightly in vinaigrette.
Sliced on sandwiches.
Blend with yogurt, fresh mint, fresh basil, salt and pepper for a cold soup.
